Baking Dairy Free Currant Cookies

One thing I am not very good at, and I admit with honesty, is cooking. I am completely useless at it. I usually forget ingredients, cook things wrong or over cook them. I’m utterly useless, but one thing I don’t seem to struggle with is these cookies! I have baked them a few times with my mum by following this recipe, however I substitute regular butter for a dairy free option like Vitalite and I also substitute the chocolate chips for currants, so they are completely dairy free.

The first time I found the recipe, I was skeptical because every batch of cookies I’ve made in the past were never chewy or moist, they were always more like biscuits, but these are one of the best cookies I’ve ever made myself! I did mess them up one time though, that was by melting the butter too much, you just need to make it moist so it’s like paste rather than liquid, if you liquify it, it doesn’t work at all, as I found out. They should mention that in the recipe, but they don’t. So what are some of your favourite cookie recipes?

    Are you dairy free by choice? Or is it a lactose intolerance? They look yummy!

      It’s lactose intolerance lol! I can handle a very small amount of it, but too much of it upsets me badly. It’s a bit annoying, but I’m used to it by now 🙂 They definitely are yummy though 🙂

    aww man, can’t imagine being lactose intolerant! i think it’s a blessing in disguise tho bc isn’t dairy not-that-healthy? anywho, looks delish!

      Yeah it’s not supposed to be healthy, but it depends on what you have, I think yogurts are fine and things, it’s just full fat milks, creams and cheeses. They are very high in fat. But also the dairy contains hormones from the cows, which messes up your own hormones. It’s all sorts of complicated, ha ha!

    I love cookies, but I have to have white and milk chocolate in them, this makes them really tasty and yummy, but yours look lovely too, and I shall certainly follow this recipe x

    Wow those cookies look delicious!!! I have the same problems when baking cookies…they always come out like biscuits xD I’m definitely gonna try these out!!! I might send you pictures when I do, if you wish! =D
